Why Quality Always Wins

Price per pound tells you almost nothing about value. A cheap steak you chew through is the most expensive dinner of all.

Provenance matters. We buy whole animals from farms we know by name, so every cut is traceable to a pasture — never a mystery box.

The cut is the craft. A skilled butcher seams out muscles instead of sawing through them, which is why our steaks eat tender at every price point.

Freshness is a system. Whole-animal buying, daily grinding and small batches mean nothing sits around. Taste the burger blend once and the difference is obvious.

Quality is not a luxury here. It is the whole business model — and it is why our regulars plan their week around the case.
